Don't really know the wattage but yes it does heat up very quickly and it does maintain heat - you have to unplug sometime during cooking to regulate your heat for the type of food that you are cooking. The "Fry-Daddy" was simply the best one that they made but it is very hard to find that particular one anymore.
It heats up fairly quickly and remains hot. It cooks very evenly. Not sure of the actual degrees.

The fryer takes about 15 minutes to heat up according to the instruction manuel. It seems to hold temperature pretty well. If it's overloaded I notice it doesn't cook as fast tho. I don't know the watts.

I feel it heats up quickly. I plug it in with oil in it and by the time I slice up two baking potatoes for french fries, it is ready to fry them. The heat seems fine. I do not know what the wattage is. I actually like to fry food using this dualdaddy. Prior to purchasing it, I rarely fried anything. Remember, when you purchase it, if you are not satisfied, I am certain that you can return it. I really love mine.

Not as quick as the smaller frydaddy... yes it maintains heat but does (my experience) get as hot as the smaller version. Not sure about watts. I returned it to the store because it did not heat as hot as the smaller one.
