You can attach any number of hoses from 1 to 3.
Simply do not program a start time for the faucets you don't wish to connect.
You set each separately so yes, you can have as many as you want off.
Don't set the third. It will have dashes on the screen. If you have set it and don't want to used it any more, RESET the timer and set station 1 & 2.

By clearing the programming on the stations that you do not want to use, you can, indeed, use only one port.

I have one of my timers set up for watering schedules on 2 nozzles and occasional hose use on the 3rd...which means it's off until I want it. So yes...you can use just 2.

Each outlet is controlled separately. I'm using the timer with only two hoses connected and haven't had any problems.

I do not have this exact model, but I do have an older Orbit two-station version. Mine allows me to set the watering time for either station to zero minutes, so it won't run at all on that station if desired. I would assume this three-station model allows for the same. See the picture I've included (the third outlet on mine is for a manual bypass faucet).
