In most cases, yes, you can keep your number if all requirements are met.
Your current provider is required to release your number if requested and the new provider offers service in the same area (no problem with Straight Talk). However, your current service has to be active at the time you activate service at Straight Talk so be sure not to cancel your account with your current provider.
At the time of activation with Straight Talk, you will be asked if you want a new number or want to port your current number. If you choose to port (or transfer) your current number, be prepared to give Straight Talk 1) the phone number, 2) the name and address your current account is under, and 3) the PIN or password you use to access your account.
